The olive sits between the pipe and the union nut. As the nut is tightened the olive is compressed onto the pipe and into the taper of the fitting, forming the seal at the joint.

Olives deform permanently when tightened and are treated as single-use: fit a new one whenever a pipe union is disturbed.
