What does the differential pinion flange do?

The pinion flange bolts to the differential pinion shaft and connects it to the propshaft, transmitting drive from the propshaft into the axle differential. It sits at the nose of the diff housing on the front or rear axle. This is the three-bolt flange configuration.

The pinion flange sits at the nose of the axle differential housing, on either the front or rear axle. It's the point where the propshaft universal joint bolts to the diff. On Discovery 1 and Discovery 2 the same three-bolt flange is listed front and rear.
